Method Prep:10min › Cook:25min › Ready in:35min
Preheat the oven to 175 C / Gas 3/4. Grease a cupcake tray and line with cupcake cases.
Cream together the sugar and margarine until light and fluffy. Gradually add the eggs and sift in the flour. Beat in the milk and vanilla extract and mix well. At this point, if you are wanting to make chocolate sponge cupcakes also, divide the mixture and add 85g (3 oz) of cocoa powder to the chocolate sponge mixture. Spoon both mixtures into the prepared cupcake cases.
Cook in the preheated oven for 25 minutes until a skewer inserted into the centre of the cupcake comes out clean. Allow to cool then serve.
Decorate with stars or circles, made with an embossed roller, then add sugar paste cut outs of baby themed items such as bottles, bibs, prams and rocking horses. I bought my plungers from Amazon.
