Baby shower cupcakes

    35 min

A mixture of plain sponge and chocolate sponge cupcakes decorated for a baby boy shower party. Just change the colour of the icing to pink for a girl or use yellows pinks and blues if you don't know the sex of the baby.

    Serves: 12

    • 225g (8 oz) caster sugar
    • 225g (8 oz) margarine
    • 4 eggs
    • 225g (8 oz) self raising flour
    • 1 teaspoon milk
    • 1 drop vanilla extract
    • 85g (3 oz) cocoa powder (for the chocolate sponge)

    Prep:10min  ›  Cook:25min  ›  Ready in:35min

    1. Preheat the oven to 175 C / Gas 3/4. Grease a cupcake tray and line with cupcake cases.
    2. Cream together the sugar and margarine until light and fluffy. Gradually add the eggs and sift in the flour. Beat in the milk and vanilla extract and mix well. At this point, if you are wanting to make chocolate sponge cupcakes also, divide the mixture and add 85g (3 oz) of cocoa powder to the chocolate sponge mixture. Spoon both mixtures into the prepared cupcake cases.
    3. Cook in the preheated oven for 25 minutes until a skewer inserted into the centre of the cupcake comes out clean. Allow to cool then serve.

Decorate with stars or circles, made with an embossed roller, then add sugar paste cut outs of baby themed items such as bottles, bibs, prams and rocking horses. I bought my plungers from Amazon. Check out our comprehensive icing recipe collection here. You can use food colouring in the icing to achieve the pinks, blues and yellows.

Heard of this idea before and I find it really nice to give to a mother with a baby without spending too much money.  -  05 Dec 2015
