Malaika's Salmon en Croute

    The family really enjoyed this one especially as they could not imagine salmon in pastry. The white sauce gave it a succulent finish.

    • 1 salmon fillet
    • 2 whole mushrooms
    • 25g flour
    • 25g butter
    • 200ml milk
    • ground herbs (optional)
    • pinch of salt
    • pinch of pepper
    • 80g sweetcorn
    • 200g plain flour
    • 100g butter
    • 1/4 teaspoon salt
    • mater to mix
    • salad leaves
    • vinaigrette dressing


    1. preheat the oven to 180◦C
    2. For the pastry put the mix the flour and salt together. Then add the butter and rub together with your fingertips to form breadcrumbs.
    3. Add a tbsp. of water at a time and fold it into the mixture to form dough. Grease the dishes. Roll the pastry out and use a cutter to fit the dishes and place inside.
    4. Place grease proof paper on top of each of the pastry dishes and put baking beans on top. And bake in the oven for 10 minutes
    5. Melt the butter on a low heat in a pan. And then gradually add the flour. Gradually add the milk until it forms a smooth creamy mixture.
    6. Add the ground herbs and black pepper and stir. Add the salmon, mushroom, sweetcorn and cook for 6 minutes.
    7. Spoon the mixture into the pastry cases and place in the oven for an additional 7 minutes.
    8. Remove from the oven and place on a cooling rack for 10 minutes.
