Moose's rock cakes

    A very easy way to make fantastic rock cakes for everyone to enjoy. This mix will make approximately 8 buns.

    Makes: 8 rock cakes

    • 225g (8 oz) self raising flour
    • 110g (4 oz) caster sugar
    • 110g (4 oz) butter or margarine
    • 110g (4 oz) raisins
    • 1 medium egg
    • glace cherries (optional)

    Prep:10min  ›  Cook:20min  ›  Extra time:30min cooling  ›  Ready in:1hr 

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with greaseproof paper.
    2. Put flour, sugar and butter/margarine into a medium sized mixing bowl and mix to a fine crumble. Add raisins, egg and cherries and mix well into a dough like mix.
    3. Place balls of dough onto the tray leaving room between each ball as they will spread a bit in the oven.
    4. Bake for 15 to 20 minutes or until nicely browned. Remove from oven and transfer to a cooling rack.

    These are DELICIOUS, and SO easy to make!!!! Cannot believe how easy they are to make, so little time needed for such a scrumptious cake!!! Thanks a lot for such an easy recipe, I will certainly be making many of these in the future!  -  20 Aug 2013
