    About this recipe: This is a very simple recipe, that makes chewy, soft cookies every time! I use a mixture of milk and dark chocolate chips, but you can use whatever you want to. Makes about 20 cookies.

    Makes: 20 cookies

    • 125g caster sugar
    • 100g light brown soft sugar
    • 125g butter, softened
    • 1 egg, beaten
    • 225g self raising flour
    • 100g chocolate chips
    • 1 teaspoon vanilla extract

    Method
    Prep:10min  ›  Cook:8min  ›  Ready in:18min 

    1. Preheat the oven to 180 C / Gas 4. Grease two baking trays or line with baking parchment.
    2. Cream the sugars and the butter together until pale and smooth. Beat in the egg, but don't over-mix as it may curdle the mixture.
    3. Add the flour and the chocolate chips. The dough should be quite sticky. Place blobs of mixture on the prepared baking trays.
    4. Bake in the preheated oven for 7 to 8 minutes, then remove from oven and leave to cool.

    Followed the recipe, got soft, chewy and tasty cookies. Only thing the dough was too sticky to roll into a ball so I used an ice cream scope - perfect. - 19 Jul 2014
