Vanilla cheesecake with sweet popcorn

    A sweet and light summer dessert perfect for an after dinner treat or can be eaten as a refreshing afternoon snack.

    Makes: 1 vanilla cheesecake

    • 25g digestive biscuits
    • 10g melted butter
    • 30g mascarpone cheese
    • 1 tablespoon icing sugar
    • 1/2 teaspoon vanilla extract
    • small packet sweet popcorn
    • chocolate chips, to taste

    1. Crush the digestive biscuits and mix with the melted butter. Then tightly line a small ramekin with the biscuit mixture and refrigerate for 15 to 20 minutes.
    2. In a bowl, mix the mascarpone cheese, icing sugar and vanilla extract together. Remove the ramekin from the fridge and top the biscuit mixture with the mascarpone mixture and refrigerate for a further 30 minutes.
    3. Before serving, top with the sweet popcorn and chocolate chips.
