    These scrumptious chocolate muffins are delicious and will bring a spectacular taste to your mouth.

    Makes: 10 muffins

    • 250g plain flour
    • 2 teaspoons baking powder
    • 4 tablespoons cocoa powder
    • 1/2 teaspoon salt
    • 100g caster sugar
    • 75g plain chocolate chips
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 250ml milk
    • 90ml vegetable oil

    1. Preheat the oven to 190 C / Fan 170 C / Gas 5. Put 10 paper muffin cases into a muffin tin.
    2. Sift the flour, baking powder, cocoa powder and salt into a large bowl. Stir in the sugar and chocolate chips.
    3. In a separate bowl, beat together the egg, vanilla extract and milk. Add the oil, stirring to mix.
    4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not beat or over-mix – the cake mixture will still be a little bit lumpy.
    5. Spoon the mixture into the muffin cases and bake for 20 to 25 minutes. Cool on a wire rack.


    To make it be even more chocolate, melt some butter and milk and chocolate over the pan. Drizzle over muffins.

    I followed it exactly. I have to admit I am new to baking and didn't realise this is a "diet" recipe. So be warned there is not enough sugar in this recipe for it to be as sweet as you'd expect. I think the melted chocolate on top is a must if you want it to taste acceptable. Something you could bake for yourself so you don't feel guilty for indulging but for company it's just too bland.  -  31 Mar 2018
