About this recipe: If you have an excess of blackberries and limited time to spend in the kitchen then this is the dish for you! This is a fantastically easy dessert to whip up with minimal work. Fresh blackberries, a little sugar and some shop-bought scones do the job nicely. Serve with some vanilla ice cream or fresh whipped cream.

Serves: 6 

  • 450g (1 lb) fresh blackberries
  • 1 to 2 teaspoons brown sugar (optional)
  • 1 pack plain scones, halved
  • sprig lemon balm, to garnish

  1. Preheat the oven to 180 C / Gas 4. Grease a medium baking dish.
  2. Place the blackberries in the prepared baking dish and sprinkle with sugar. Lay the halved scones over the top. Cover with tin foil.
  3. Bake in the preheated oven for 10 minutes, then remove the tin foil and bake for a further 10 to 15 minutes. Remove from the oven, cool slightly before serving. Garnish with a sprig of lemon balm.


Blackberries peak during the months of August and September, so get out there with your baskets and take full advantage of this incredible wild food.
