Cuban scrambled eggs

    This is a recipe straight from my grandmother's recipe cards. Scrambled eggs with veg is a real classic that is perfect with some Nativo Aji Picante Sauce, a hot garlicky pepper sauce.

    Serves: 4 

    • 3 tablespoons butter
    • 1 small green pepper, minced
    • 4 tablespoons green peas, fresh/frozen or canned
    • 1 small onion, minced
    • 3 medium tomatoes, peeled, seeded and diced
    • 1 tablespoon chopped fresh parsley
    • 6 eggs, well beaten
    • Salsa Aji Nativo, or another hot sauce
    • salt and pepper to taste
    • 6 eggs, well beaten

    1. Melt the butter in a frying pan. Add pepper, peas (if using fresh or frozen), onion, tomatoes, parsley, salt and pepper and fry until veg are tender.
    2. Add in peas (if canned) and eggs and keep stiring until eggs are well scrambled.
