This is a wonderful chilled seafood salad with squid and prawns, with just a sensation of heat from the chilli cooled down by citrus flavours. Enjoy with some crunchy chicory or in the leaf cups of a little gem lettuce.

450g squid, cleaned
250g prawns, cooked and shelled
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
1 tablespoon chopped fresh coriander
3 tablespoons olive oil
1 teaspoon sesame oil
1 tablespoon lemon juice
1/4 teaspoon red chilli, seeded and finely chopped
Cut the squid into rings and chop the tentacles. Bring a saucepan of water to the boil and add the squid, cooking for only a minute. Remove from the water with a slotted spoon and cool immediately with cold water.
In a bowl, combine the squid with the prawns, fresh herbs, oils, lemon juice, chilli and seasoning. Mix well. Chill in the fridge for 2 hours prior to serving.
