Creamy peppermint creams

    If you want a minty treat try these peppermint creams. Little white balls of peppermint made with only three ingredients.

    Serves: 12 

    • 450g icing sugar
    • 2 egg whites
    • 1 to 2 teaspoons peppermint flavouring/essence

    1. Sift the icing sugar into a bowl.
    2. Carefully put the egg whites into a different bowl making sure there is no yolk or shell. Add half the icing sugar to the egg whites and mix well with a wooden spoon.
    3. Beat with an electric mixer for 5 minutes.
    4. Add the rest of the icing sugar and the peppermint flavoring and beat until the mixture is stiff. You may need to add more icing sugar.
    5. Line a baking tray with greaseproof paper.
    6. Using your hands, make little balls or flat ovals (or any other simple shape) with the mixture. Add more icing sugar if it gets sticky.
    7. Put the balls onto the tray and put the tray into the fridge until they are firm, about 10 to 30 minutes.
    8. You can either store them in the fridge or put in a box and keep in a cool and dry place.


    Add more or less peppermint flavouring depending on how much you are going to make. If you only use 200g icing sugar only use around 1 teaspoon peppermint flavouring.
