Preheat the oven to Gas Mark 3 (160C).
In a large pan slowly melt the butter.
Once completely liquefied add the syrup and sugar then mix completely, making sure there are no lumps. Finally add the oats.
Empty into a 20x30cm baking tray lined with grease-proof paper or wiped around with a little butter (about a teaspoon sized amount).
Bake in the centre of the oven for about 30 minutes.
They will be done when the edges start to brown, don't worry if there is butter on the surface or it's still unset, this will solidify on cooling.
Now leave to rest for about 5 hours somewhere cool at room temperature.
Once set (reasonably firm to touch) add the marshmallow fluff like icing and leave to set in the fridge while you melt the chocolate as individual cubes in a Bain Marie (glass bowl in boiling water). Keep stirring.
Once the marshmallow is firm and the chocolate is fully melted pour the chocolate over the flapjacks and allow to cool in the fridge until set
