Chorizo stew

    My flatmate taught me this recipe for chorizo stew. I had never had chorizo before and now it's a regular on my dinner table after this very easy and quick to make recipe. I'm not a great cook and even I can do this one!

    Serves: 4 

    • olive oil, for frying
    • 1 onion, sliced
    • 1 whole chorizo sausage, diced
    • 2 (400g) tins chopped tomatoes
    • 1 (400g) tin butter beans
    • 1 (400g) tin cannellini beans
    • dried mixed herbs to taste

    1. Fry onion until translucent in a drizzle of olive oil. Add chorizo and cook for 5 minutes.
    2. Add your tomatoes and beans. Bring to boil and add dried herbs. Let boil for about 10 minutes, or till the sauce has thickened to your liking. Serve.


    You can also use kidney beans if you like. Also tastes great with some bacon added.
