Slow cooker lamb kleftiko

    6 hours 10 min

This delightful Greek dish is a favourite in our household. In this dish, lamb shanks are slow cooked in stock and white wine with vegetables and herbs. I absolutely love using my homemade spice mix for this recipe.

    1. In a casserole dish, melt the butter and add the lamb. Brown the shanks on all sides. Remove from the dish and set aside. Add the oil and combine the shallots, carrots, celery and garlic and cook and stir for 3 to 4 minutes until soft. Add the tomatoes, olives, bay leaves, rosemary and spice mix. Stir well then add the stock and wine, then return the lamb back to the dish and bring to the boil.
    2. Transfer everything to a slow cooker and cook on medium high for about 6 hours until the lamb is tender and falling off the bone. Skim off any fat and serve.

I LOVE this recipe. I didn't use the lamb spice mix as I didn't have any, and it came out delicious. I'm curious to try it with spices now!  -  24 Jan 2017
