Easy Moroccan chicken

    This Moroccan chicken is quick, easy and very tasty. So simple to prepare and just perfect for a midweek supper if you prepare the marinade in advance. Serve with couscous.

    Serves: 4 

    • 900g skinless chicken breast fillets, cut into strips
    • 1 red chilli, seeded and minced
    • 1 teaspoon dried chilli flakes
    • 1 tablespoon minced garlic
    • 2 teaspoons ground cinnamon
    • 2 teaspoons ground cumin
    • 4 tablespoons sultanas
    • 2 to 4 tablespoons pine nuts
    • 3 tablespoons olive oil
    • zest and juice of 1 lemon
    • juice of 1/2 an orange
    • 1 tablespoon chopped fresh coriander, to garnish
    • 1 tablespoon chopped fresh mint, to garnish

    1. In a large non metallic bowl, combine the chicken, chilli, chilli flakes, garlic, spices, sultanas and nuts. Marinate for 2 hours or overnight.
    2. Heat the olive oil in a frying pan and add the chicken and marinade. Bring to the boil for 5 minutes then add the lemon zest and juice and orange juice. Reduce the heat and simmer for 7 to 10 minutes. Garnish with the chopped herbs.
