About this recipe: This Italian baked fish dish needs no complexities to make it absolutely top drawer. Use fresh ingredients where possible and you just can't go wrong. Bellissima!


Serves: 6 

  • 6 fresh sea bass fillets
  • olive oil, to taste
  • zest and juice of 1 lemon
  • 6 tablespoons capers
  • 3 tablespoons pitted black olives
  • 10 cherry tomatoes, halved
  • salt and pepper, to taste
  • 1 tablespoon chopped fresh flat leaf parsley
  • 1 teaspoon chopped fresh basil

  1. In a glass bowl, combine the fish fillets, olive oil, lemon zest and juice and marinate for 1 hour.
  2. Preheat the oven to 240 C / Gas 9. Grease a baking dish.
  3. Transfer the fish to the prepared baking dish placing skin side down. Sprinkle with capers, olives, tomatoes and salt and pepper.
  4. Bake for 15 minutes until the fish flakes easily with a fork. Remove from the oven and top with the chopped herbs. Serve immediately.
