Glossy and moist banana bread

    This is really a fantastic banana bread recipe that is simple and delicious. For best results, use very ripe bananas.

    Serves: 8 

    • 2 eggs
    • 350g sugar
    • 120ml vegetable oil
    • 1 teaspoon vanilla extract
    • 3 to 4 bananas, mashed
    • 230g plain flour
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt

    1. Preheat the oven to 180 C / Gas 4 and grease a 23x33cm cake tin.
    2. Whisk the eggs, sugar, oil, vanilla and banana. Through a sieve, add the dry ingredients and mix. Tip the mix into the tin.
    3. Bake for 40 to 45 minutes. The cake is ready when the skewer comes out clean.

    Added chopped pecans and baked in mini loaf pans (got 3 loaves). I like things less sweet and my bananas were very ripe and sweet, so I cut the sugar by 2/3 and was very happy with the way this recipe turned out (personal taste preference).     I've used this recipe countless times and every time it comes out perfect. I don't put as much sugar as I feel that 350g is far too much, instead I put 200g.  -  29 Aug 2017
