About this recipe: These delicious easy wraps are a great way to use up leftover chicken. Bundle up in foil for a filling, portable packed lunch.

Serves: 4 

  • 130g (4 1/2 oz) couscous
  • 260ml (9 1/2 fl oz) boiling water
  • the zest and juice of 1/2 lemon
  • 1 tablespoon extra virgin olive oil
  • salt and pepper, to taste
  • 1/2 cucumber
  • 150g (5 1/2 oz) cherry tomatoes
  • small bunch parsley, leaves chopped
  • small handful mint leaves, chopped
  • leftover roast chicken, shredded
  • 4 tablespoons natural yoghurt
  • 4 large wraps

  1. Place the couscous in a bowl, squeeze over the lemon and add the zest, olive oil and seasoning. Pour over the boiling water, stir, then cover with cling film or a plate and set aside to soak for 5 minutes. Fluff with a fork and check the seasoning.
  2. Fold the cucumber, tomato, herbs and chicken through the couscous. Divide generously between 4 wraps, drizzle with the yoghurt, fold in the ends and roll up, securing with a cocktail stick.
