Sweet chilli squid and noodles

    This stir fry noodle dish is on the table in 15 to 20 minutes. It is delicious, and low-fat!

    Ingredients
    Serves: 2 

    • 1 pack (225 to 300g) rice noodles
    • 350g squid
    • oil for frying
    • 2 garlic cloves
    • 200g green veg (e.g. courgette strips, sugar snap peas, runner beans)
    • 2 spring onions
    • 2 to 3 tablespoons sweet chilli sauce
    • 1/2 lime, juiced

    Method

    1. Put the noodles in a bowl and pour boiling water over them. Set aside for 15 minutes.
    2. Cut the squid into strips and pat dry. Heat some oil in a wok, and quickly fry the squid for 3 to 4 minutes. Don't overcook, or it will go rubbery. Transfer to a bowl.
    3. Finely chop the garlic and finely slice your green veg. Add to the wok and cook for 2 to 3 minutes.
    4. Drain the noodles and add to the wok with the squid until all heated through, 2 to 3 minutes. Chop the spring onions and stir through. Take off the heat, stir through the sweet chilli sauce (and the juice of a lime if using). Serve.

    Tip

    This also works really well with spaghetti instead of noodles.
