Put the noodles in a bowl and pour boiling water over them. Set aside for 15 minutes.
Cut the squid into strips and pat dry. Heat some oil in a wok, and quickly fry the squid for 3 to 4 minutes. Don't overcook, or it will go rubbery. Transfer to a bowl.
Finely chop the garlic and finely slice your green veg. Add to the wok and cook for 2 to 3 minutes.
Drain the noodles and add to the wok with the squid until all heated through, 2 to 3 minutes. Chop the spring onions and stir through. Take off the heat, stir through the sweet chilli sauce (and the juice of a lime if using). Serve.
Tip
This also works really well with spaghetti instead of noodles.
