Spicy chicken salad

    This is an easy spicy chicken salad just perfect for summer picnics or barbecues. Get the chicken marinating the night before if you can as this yields better flavour; the rest of it just needs chopping up and tossing into a bowl. Quick and easy!

    Serves: 10 

    • For the chicken
    • 8 skinless chicken breast fillets, sliced
    • 1 1/2 teaspoons salt
    • 1 teaspoon brown sugar
    • 1 teaspoon ground ginger
    • 1 teaspoon cayenne pepper
    • 1 teaspoon mustard powder
    • 1/2 teaspoon ground turmeric
    • 1/2 teaspoon curry powder
    • pepper, to taste
    • 4 tablespoons olive oil
    • For the salad
    • 3 cloves garlic, minced
    • 1/2 cucumber, sliced
    • 1 red pepper, sliced
    • 1 (195g) tin sweetcorn, drained
    • 3 little gem lettuces, chopped
    • juice of 1/2 lemon
    • 1 tablespoon chopped fresh coriander

      For the chicken:

    1. In a bowl, combine the chicken with all of the seasonings and allow to marinate in the fridge for 3 hours or overnight.
    2. Heat half the olive oil in a wok over a high heat and cook the chicken strips until no longer pink in the centre. Set aside.
    3. For the salad:

    4. In a large bowl, combine all of the ingredients for the salad along with the remainder of the olive oil. Add the chicken and toss. Taste and season if necessary.


    You can serve this salad with the chicken hot and straight from the pan or you can serve chilled.
