About this recipe: All-bran® loaf is perfect any time of day and particularly around tea time. Enjoy with a little jam like we do.


Makes: 1 All-bran® loaf cake

  • 200g All-bran®
  • 85g mixed dried fruit
  • 175g brown sugar
  • 55g mixed nuts, finely chopped
  • 2 teaspoons mixed spice
  • 240ml cold tea
  • 225g self raising flour
  • 2 to 3 tablespoons milk

  1. Combine all of the ingredients, except the self raising flour and milk, in a large mixing bowl and leave to soak overnight.
  2. The next day, preheat the oven to 180 C / Gas 4. Grease and line a large loaf tin with baking parchment.
  3. Add the self raising flour to the mixture and stir to blend well. Add a little milk if necessary so that it is moist enough to drop into the loaf tin.
  4. Bake for 1 hour, or until a skewer inserted into the centre comes out clean. Allow to cool for 1 hour before serving.
