Combine butter, brown sugar and icing sugar together in a bowl.
Add in the milk, egg, coffee oil and salt. Mix till blended.
In a separate bowl mix the zests, almond, fruits, chocolate and ginger and set aside.
Sift wheat flour, corn starch, baking powder, soda, nutmeg, mango, cinnamon, vanilla and emplex into the butter mixture and add the whole wheat flour at last. Mix till combined.
Now fold in the chocolate and zest combo until combined. The dough will be soft, wrap up in a plastic wrapper and refrigerate for at least 2 hours.
Roll out the dough on a floured surface for about 1cm thick and cut using desired cookie cutter and place on a greased baking sheet.
Before baking it on a 180 C oven for 10 minutes, brush the short bread with milk and sprinkle with sugar. You can also use colored sugar or cinnamon sugar or instead bake just as it is and coat with chocolate.
You can be versatile with this recipe, either omit some of the ingredients or add in some herbs to make it savory. Give it your own touch friends!!
