    Ingredients

    • one ham shank or 2 ham stock cubes
    • 2 leeks -use only white part
    • 4 carrots
    • i small turnip
    • 6 large tatties -potatoes
    • no photos available
    • fill a large pot with boiling water and add ham shank or stock cubes cut leeks

    Method

    1. slice leeks thinly and add to pot
    2. slice carrots thinly and add to pot
    3. dice turnip and add to pot
    4. cut tatties -potatoes into small pieces and add to pot
    5. add water to cover all ingredients -bring to boiling point -lower heat and simmer for 1 hour 30 minutes -add boiling water if becomes too thick -stir occasionally to ensure it does not stick to bottom of pot
    6. 5 minutes before soup is ready remove ham shank -serve soup with morning rolls or plain bread -
    7. season the soup with salt when cooking -this is a matter of taste but I add half a soup spoon of salt -some prefer to add pepper also -

    I added knorr chicken stock cubes and grated carrot to put in half hour before the end to give it some colour and thickness loved it thank you  -  08 Oct 2016
