Really easy vanilla ice cream

    An easy peasy vanilla ice cream made with shop-bought custard. Method given for both with and without an ice cream maker.

    Serves: 4 

    • 1 vanilla pod or 2 teaspoons vanilla extract
    • 500g good quality custard
    • 284ml double cream
    • 3 teaspoons milk

    1. Scrape the seeds from the vanilla pod, if using. Mix seeds together with all ingredients in a bowl. Pour into an ice cream machine. Churn until frozen. Transfer to a freezer container and freeze.
    2. Alternatively, make without a machine. Mix all ingredients in a bowl. Put bowl in freezer for about 90 minutes or until it starts to freeze around the edges. Stir well, then repeat the process two more times until the mix is smooth and almost frozen. Transfer mixture to a suitable container and freeze till needed.
