Upside down cake

    Looks like a cake, but turn it over and it's a fruity pudding! Also makes a great treat. Makes one big cake or 24 small.

    Serves: 8 

    • 125g (4 oz) self raising flour
    • 1 teaspoon baking powder
    • 125g (4 oz) butter, room temperature
    • 125g (4 oz) caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • fruit (try raisins, glace cherries, tinned oranges, peaches or pineapple)

    1. Sift the flour and baking powder into a bowl. Add the butter, sugar, eggs and vanilla. Whisk till smooth and creamy.
    2. Preheat the oven to 190 C / Gas 5. Grease a 20cm (8 in) round springform tin.
    3. Arrange the fruit of your choice in a single layer covering the bottom of the tin. Spoon over the cake mixture and smooth out the top.
    4. Bake for 20 to 30 minutes in the preheated oven, till a skewer inserted in the centre comes out clean.
    5. Cover the tin with a serving plate. Flip it over and let cool, then remove the tin and serve.


    Instead of one large cake, you can make 24 individual cakes using small tins or ramekins. Simply adjust the baking time as needed.
