Preheat your oven to 160 C / Gas 2-3. Grease loaf tin with butter.
Melt 30g butter in a pan and add in apple slices. Leave to cook for 5 minutes, stirring occasionally. Add a few drops of vanilla essence, stir, and sprinkle over half of the almonds. Cook on low heat until soft. Leave to cool.
Cream together 150g butter and the sugar in a bowl.
In another bowl whisk the eggs with milk and a few drops of vanilla extract. Add to butter and sugar mixture and beat. Fold in the flour and remaining almonds.
Add about half of the mixture to the loaf then carefully add apple mixture, berries and a blob of jam. Cover with the remaining mixture and even out with a spatula.
Bake in the preheated oven until a skewer comes out clean, about 45 to 50 minutes.
Leave to cool for 10 minutes before transferring to a cooling rack.
Instead of a loaf tin you can also bake this in a muffin or round cake tin.
