    About this recipe: This lovely wholemeal fruit cake recipe has been in our family for years and is the perfect addition to any tea party or picnic.

    Serves: 8 

    • 110g (4 oz) self raising flour
    • 110g (4 oz) wholemeal flour
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • 1 pinch salt
    • 110g (4 oz) butter
    • 170g (6 oz) caster sugar
    • 2 eggs, beaten
    • 5 tablespoons milk
    • 340g (12 oz) mixed dried fruit

    1. Preheat the oven to 200 C / Gas 6. Grease and line a deep round 20-23cm cake tin.
    2. In a bowl, sift together the flours with the spices and salt. Rub in the butter until the mixture resembles fine breadcrumbs, then add the sugar. Beat together the eggs and the milk and pour into the cake mixture. Add the fruit and stir well. Pour the cake mixture into the prepared cake tin.
    3. Bake in the centre of the oven for 60 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and cool.

    This recipe is incorrect. A raising agent is needed. I have found that 1/2 tsp baking powder works ok, sieved in with the flour. Also, the oven temperature and cooking time is incorrect. I cooked mine at Gas Mark 4, 180 (not fan) for 55 to 60 minutes and this seemed fine. With these changes the recipe makes a nice cake. I sprinkle a couple of tablespoons of demerara sugar over the top before cooking.  -  16 Mar 2016


    Just made this....timing is wrong for a fan oven! I did adjust, but even then too hot at 180.... I could smell it cooking (usually remove my cakes then) but it still had 25 mins to go, so left it another 10 mins, and consequently it was over baked......too hot to try, but will let you know if it was worth it folks!!  -  01 Feb 2016


    If I had read the reviews before I made this cake I wouldn't have made it, never the less I did it was lovely it did rise not as much as a normal fruit cake next time I might put some baking power in.  -  10 Feb 2017
