Plain fudge

    This is a tried and tested old family recipe for plain vanilla fudge made with condensed milk. We love to make this every year at Christmas and snack on it over the week. Great to make in large batches and give as gifts also.

    Serves: 16 

    • 450g granulated sugar
    • 160ml water
    • 55g butter
    • 1 teaspoon vanilla extract
    • 1 (397g) tin condensed milk

    1. Line a tray with baking parchment.
    2. Combine all ingredients in a saucepan and simmer gently for about 1 hour, stirring frequently, until the mixture thickens and begins to turn a light brown colour. When the mixture becomes very thick and looks just about like it is going to set, remove from the heat and pour quickly into the prepared tray. Mark out into squares and allow to cool.


    This fudge can easily be made into chocolate fudge, by adding a tablespoon of cocoa powder to the mix.

    The instructions are wrong. Fudge should not be just simmered.. You should always bring it to a rolling boil otherwise it won't thicken or set.  -  22 Jul 2015


    i found that this recipe was quite easy however it didnt thicken in the pan as suggested in the post above, i put it in my mixer for a good 5 minutes checking it regularly to prevent it from going grainy and it has worked so far for me.  -  30 May 2015


    Tried this ! It didn't work! And it didn't thicken up at all when it was in the pan !  -  03 Apr 2014
