Banana cupcakes with a honey frosting

    Perfect if you have any leftover bananas that are going off. Such a sweet treat and so easy to make.

    Serves: 12 

    • 260g plain flour
    • 1 teaspoon baking powder
    • 190g caster sugar
    • 3 ripe bananas
    • 70ml vegetable oil
    • 1 egg, at room temperature
    • 1 teaspoon vanilla extract
    • 150g icing sugar
    • 115g unsalted butter
    • 1/2 teaspoon ground cinnamon
    • 1 1/2 tablespoons runny honey

    1. Preheat your oven to 180 C / Gas 4.
    2. Mix your plain flour, baking powder and caster sugar in a bowl.
    3. Place your bananas in a bowl and get mashing, if you're having a bad day this is such a good release!
    4. Place your oil, egg and vanilla extract in with your banana and give it a whisk. Make sure there are no big lumps and that it is well mixed.
    5. Add your dry ingredients to the wet ingredients and mix it all together.
    6. Place cake mixture into cupcake cases, fill to the top as this gives them a good rise and makes it easier to ice them.
    7. Bake in the oven for 20 to 25 minutes until a skewer inserted into the centre comes out clean.
    8. Mix together your icing sugar and butter until smooth. Add your honey and cinnamon and give it a good whisk until smooth and light, if too thick add some milk.
    9. Remove the cakes from the oven and cool. Either spread the frosting over your cakes or pipe it on with your preferred nozzle.


    When making your frosting, if the icing sugar and butter is too thick, you can always add a little milk.
