1 pig's flead
900g pig's liver
450g finely chopped onion
2 tablespoons chopped fresh sage

Soak the pig's flead in tepid water for 10 to 20 minutes until it becomes more supple.
Preheat the oven to 190 C / Gas 5. Grease a baking tray.
Mince the pig's liver then transfer to a bowl and add the onions, breadcrumbs, sage and seasoning. Form into golf ball sized balls. Cut the flead into sections big enough to wrap around each faggot. Arrange the faggots on the prepared baking tray.
Bake in the preheated oven for 20 to 30 minutes. Remove from the oven and serve.
Have a chat with your local butcher about getting some good quality pig's liver and flead. The fresher the ingredients, the better the faggots.
The breadcrumbs play an important role in this recipe and results are best when you use 1/2 stale loaf popped in the food processor.
