About this recipe: Rabbit stew went out of fashion for many years, but now I hear of more and more people making it again. This is a tasty and cheap dish and great with some boiled potatoes.

Serves: 6

  • 1 rabbit, skinned and jointed
  • 25g plain flour
  • 250g bacon, chopped
  • 1 swede, peeled and diced
  • 4 carrots, sliced
  • 3 onions, chopped
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons lard
  • salt and pepper, to taste

Prep:10min  ›  Cook:1hr30min  ›  Ready in:1hr40min

  1. Toss the rabbit pieces in the flour then combine all of the ingredients in a large casserole dish. Cover with water and simmer slowly for about 90 minutes until the rabbit is tender. Serve hot.

This is a great recipe for a slow cooker. Just combine the ingredients and cook on medium for a few hours.
