Teisen mêl a sinsir (Honey and ginger cake)

    This is a nice honey and ginger cake with a few modern ingredients sprinkled in. A nice Welsh-inspired addition to your afternoon tea spread.

    Makes: 1 honey and ginger cake

    • 450g plain flour
    • 2 teaspoons baking powder
    • 2 teaspoons ground ginger
    • 1 pinch salt
    • 110g sultanas
    • 110g glace cherries, halved
    • 110g butter, melted
    • 3 tablespoons honey
    • 5 tablespoons milk
    • 2 eggs, beaten

    1. Preheat the oven to 190 C / Gas 5. Grease a cake tin and line with baking parchment.
    2. In a bowl, sift together the flour, baking powder, ginger and salt. Add the dried fruit and mix well. In a separate bowl, combine the melted butter, honey and milk. Add the wet ingredients to the dry and add the eggs. Mix thoroughly and pour into the prepared cake tin.
    3. Bake for 40 to 50 minutes in the preheated oven until firm and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before serving.
