Bara carwe sir fôn (Anglesey caraway bread)

    This lovely savoury caraway bread is yeast free and very rustic. Full of flavour, enjoy with a thick slice of mature Cheddar cheese and a nice dollop of chutney.

    Makes: 1 loaf caraway bread

    • 450g plain flour
    • 1 pinch salt
    • 60g butter
    • 1/2 teaspoon baking powder
    • 25g caster sugar
    • 15g caraway seeds
    • 300ml milk
    • 1 egg, beaten

    1. Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin.
    2. Sift the flour and salt into a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Add the other dry ingredients. Beat the milk and egg together and gradually pour into the dry ingredients, mixing well to form a light dough. Transfer the dough to the prepared loaf tin.
    3. Bake for about 1 hour until firm and lightly golden. Remove from the oven and cool before enjoying.

    For a St David's Day Starter I used this recipe to make bread rolls as an accompaniment to leek and potato soup; so that the caraway didn't overwhelm the soup i reduced the caraway seeds to 10g and to get the extra rise needed in rolls increased the baking powder to 1 1/2 teaspoons. It made 8 medium sized rolls which were delicious  -  21 Feb 2017
