About this recipe: Still a favourite after all these years, this recipe comes from the county of Powys in mid Wales, although it is thought that traditionally rice pudding was known as whitepot and a favourite dish of the Tudors. I like to add a dollop of strawberry jam to this pudding, or grate some chocolate on top.

Serves: 4

  • 50g pudding rice
  • 600ml milk
  • 25g caster sugar
  • 1/4 teaspoon vanilla extract
  • 1 pinch ground nutmeg
