Quicker homemade mayonnaise

    Homemade mayonnaise always tastes better in my book. Sometimes it takes a special occasion to warrant the making of mayonnaise, so why not pop to the market and by some fresh crabs. The method for this mayonnaise saves a little more time than other recipes I have seen, hence the name.

    Serves: 8 

    • 1 egg
    • 2 egg yolks
    • 3 1/2 dessertspoons wine vinegar
    • 1/2 teaspoon caster sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon mustard powder
    • 300ml olive oil

    1. Blend all of the ingredients together in a food processor, except the oil, for approximately 30 seconds and then very gradually pour in the oil, pulsing after each addition. Chill and serve.
