Cuban sandwich

    To make an authentic Cuban sandwich you normally need a flattop grill called plancha but I use a cast iron skillet and a brick wrapped in aluminium foil to recreate the magic of the plancha.

    Serves: 2 

    • 1 garlic clove
    • butter, softened
    • 1 loaf Cuban bread, or long, baguette like loaf
    • 500g slow roasted sliced pork, marinated in mojo
    • 500g sliced ham
    • 500g sliced Swiss cheese
    • sliced dill pickles
    • spicy chilli sauce (optional)

    1. Cut the bread in half. Rub the garlic love into the bread, or spread butter on both halves.
    2. Assemble your sandwich with the remaining ingredients: sliced pork, ham, cheese, pickles, and chilli sauce if desired.
    3. Place your sandwich in the cast iron skillet and place the wrapped brick on top. Flip the sandwich after about 2 minutes and grill the other side. Serve immediately.

    These sandwiches are a favorite in my household. I omit the sauce listed in the recipe, but rather use yellow mustard (traditional), spreading it on one side of the bread. I, too, am too cheap to buy a plancha or panini press so I use the brick method---it works just fine.  -  01 Apr 2014
