Red lentil and bacon soup

    Perfect for warming the cockles on a cold day, a bowl of this delicious bacon and red lentil soup with some crusty bread an butter will soon warm you up.

    Serves: 4 

    • oil for cooking
    • 500g cooking bacon, chopped
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 250g red lentils
    • 1L chicken stock
    • 2 teaspoons English mustard
    • 1 dash Worcestershire sauce
    • 1 teaspoon salt
    • 2 teaspoons sugar
    • pepper
    • instant potato mash for thickening (optional)

    1. Add a little oil to a cooking pot on a high heat, add bacon, onion and garlic and fry until soft, about 5 minutes.
    2. Add lentils, reduce heat and fry for a few minutes more.
    3. Next add chicken stock followed by all the other ingredients. Bring to the boil, then reduce heat and gently simmer with a lid on for 40 minutes stirring occasionally.
    4. After 40 minutes check to see if the lentils are soft and the soup has thickened. If not cook for a further 10 to 15 minutes. If the soup is too thick add more stock or water, and if you would like it thicker add a little instant potato to thicken. Serve with fresh crusty bread and butter.

    Lovely soup, have made it twice now and will be making again. Has convinced my husband that a bowl of homemade soup and crusty bread is a meal in itself and not just a snack!  -  29 Jan 2015
