Add a little oil to a cooking pot on a high heat, add bacon, onion and garlic and fry for a few minutes,
then add lentils, reduce heat and fry for a few minutes more.
Next add chicken stock followed by all the other ingredients, bring to the boil then reduce heat and gently simmer with a lid on for 40 minutes stirring occasionally
, after 40 minutes check to see if the lentils are soft and the soup has thickened, if not cook for a further 10-15 minutes, if the soup is too thick add more stock or water, if you would like it thicker add a little instant potato to thicken. Serve with fresh crusty bread and butter and enjoy !!!!!
