2 egg yolks
1 teaspoon salt
1 teaspoon caster sugar
1 teaspoon English mustard powder
1 pinch cayenne pepper
2 to 4 tablespoons cider vinegar
140ml olive oil
salt and pepper, to taste
chopped fresh chives, to taste
chopped fresh mint, to taste
chopped fresh parsley, to taste

In a bowl, whisk the egg yolks together with the salt, sugar, mustard powder and cayenne pepper. Mix the cider vinegar in gradually. Whisking constantly, add the oil very gradually a few drops at a time to start then add a little more as the dressing emulsifies. Season to taste and stir in the herbs. Serve.
