Salad dressing

    This lovely salad dressing is creamy and delicious. Perfect for any salad and lovely with cold meats and boiled potatoes.

    Serves: 6 

    • 2 egg yolks
    • 1 teaspoon salt
    • 1 teaspoon caster sugar
    • 1 teaspoon English mustard powder
    • 1 pinch cayenne pepper
    • 2 to 4 tablespoons cider vinegar
    • 140ml olive oil
    • salt and pepper, to taste
    • chopped fresh chives, to taste
    • chopped fresh mint, to taste
    • chopped fresh parsley, to taste

    1. In a bowl, whisk the egg yolks together with the salt, sugar, mustard powder and cayenne pepper. Mix the cider vinegar in gradually. Whisking constantly, add the oil very gradually a few drops at a time to start then add a little more as the dressing emulsifies. Season to taste and stir in the herbs. Serve.
