Cut up the tomatoes and put into a pan with the water and sugar. Simmer gently for 10 to 20 minutes until tender and mushy. Remove from the heat and run the juice through a sieve into a clean jug. Add some salt and pepper and stir.
Using a funnel, transfer the juice into a sterilised bottle and store in a cool place until needed.
