About this recipe: It is almost as easy to make tomato juice as it is to walk to the shops to buy it. This is a great recipe for fresh tomato juice and perfect for using up the summer bounty.

Makes: 1 500ml bottle tomato juice

  • 675g tomatoes
  • 300ml water
  • 1 dessertspoon caster sugar
  • salt and pepper, to taste

  1. Cut up the tomatoes and put into a pan with the water and sugar. Simmer gently for 10 to 20 minutes until tender and mushy. Remove from the heat and run the juice through a sieve into a clean jug. Add some salt and pepper and stir.
  2. Using a funnel, transfer the juice into a sterilised bottle and store in a cool place until needed.
