About this recipe:This hearty beef goulash is an easy choice for dinner, it just needs a little planning ahead or you could even make it in the slow cooker. Serve with rice, mash or other vegetables. We love this dish heated up on toast the next day.
900g stewing beef, diced
2 to 4 tablespoons plain flour
2 tablespoons butter
1 large onion, chopped
450g mushrooms, sliced
100g tomato purée
1 tin chopped tomatoes
1 bouquet garni
1 teaspoon paprika
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4.
Toss the stewing beef in the flour. Melt half of the butter in an ovenproof casserole dish then brown the meat on all sides; remove from the pan and set aside. Lower the heat, melt the remaining butter then cook and stir the onion until soft. Add the mushroom and sweat for a few minutes. Stir in the tomato purée then add the tinned tomatoes, bouquet garni and seasoning. Bring to a simmer then add the beef back in.
Bake covered in the oven for 2 to 3 hours until the beef is tender and breaks apart with a fork. Remove from the oven and serve.
For the slow cooker
This dish is easily adaptable for a slow cooker. Just brown the meat before combining everything in the cooker then cook, covered on Low or Auto for 6 to 7 hours.
Pleasant enough but a bit bland. It would benefit from the use of more paprika and some garlic, either a couple of cloves crushed and cooked along with the onion or a teaspoon of puree along with the tomato puree. - 19 Dec 2014
