1 (900g) half salmon side
olive oil, to taste
chopped fresh dill, to taste
salt and pepper, to taste

Soak the oak planks in water for 3 hours prior to cooking. Use as many as are needed to support the size of the salmon side.
Preheat your barbecue to a medium-high heat, and in the meantime rub the salmon in the olive oil, dill and salt and pepper. When the barbecue is ready, lay the planks directly on the grill and lay the salmon on top. Place the lid on the barbecue.
Barbecue the salmon for about 15 to 20 minutes, checking the fish after about 12 minutes. The salmon is ready when the pink colour is uniform and flakes easily with a fork. Remove from the barbecue and serve with fresh lemon.
