    About this recipe: Salmon does not get better than this. A plank of oak is used to cook the salmon and infuse it with an incredible flavour. Enjoy with seasonal vegetables.

    Serves: 6 

    • 1 (900g) half salmon side
    • olive oil, to taste
    • chopped fresh dill, to taste
    • salt and pepper, to taste
    • lemon wedges, to garnish

    1. Soak the oak planks in water for 3 hours prior to cooking. Use as many as are needed to support the size of the salmon side.
    2. Preheat your barbecue to a medium-high heat, and in the meantime rub the salmon in the olive oil, dill and salt and pepper. When the barbecue is ready, lay the planks directly on the grill and lay the salmon on top. Place the lid on the barbecue.
    3. Barbecue the salmon for about 15 to 20 minutes, checking the fish after about 12 minutes. The salmon is ready when the pink colour is uniform and flakes easily with a fork. Remove from the barbecue and serve with fresh lemon.
