Pappardelle with creamy mushrooms

    Quick, easy and tasty recipe. Serves 3

    • 25g butter
    • 6 shallots, sliced
    • 2 cloves garlic, peeled & crushed
    • 250g chestnut mushrooms, sliced
    • 250g fresh pappardelle pasta
    • 200ml creme fraiche
    • 1 tsp wholegrain mustard
    • 1 tsp fresh thyme leaves, plus leaves to garnish


    1. Melt butter in a large pan and fry shallots and garlic for 5 mins.
    2. Add the mushrooms and cook, stirring frequently for 5 mins. Put the pasta on to cook for 4 mins.
    3. Stir the creme fraiche, mustard, thyme and seasoning into the mushrooms. Toss sauce with pasta and garnish with thyme leaves.
