About this recipe: This lovely cheese and crab soup is just delicious as a starter or as a light meal with some crusty bread or a sandwich.

Serves: 4 

  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 1/4 teaspoon salt
  • pepper, to taste
  • 1L milk
  • 250g grated Gruyère cheese
  • 1 dash Tabasco® sauce
  • 225g flaked crab
  • 2 teaspoons chopped fresh chives

  1. In a saucepan, melt the butter and add the flour, salt and pepper. Whisking constantly, gradually add the milk and cook until thickened. Add the cheese, Tabasco® and crab meat and stir well. Bring to a gentle simmer then stir in the fresh chives. Remove from the heat and serve immediately.
