Easy raisin rock cakes

    These rock cakes are easy to make and a great addition to an afternoon tea or casual party. Eat by themselves or sliced in half with a little jam.

    Makes: 12 rock cakes

    • 275g self raising flour
    • 1 large egg
    • 100g granulated sugar
    • 100g soft margarine
    • 2 tablespoons milk
    • 100g raisins
    • 1 pinch ground nutmeg

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
    2. Beat all of the ingredients together in a bowl until well combined. Spoon the mixture into 12 even sized heaps on the prepared baking tray.
    3. Bake in the preheated oven for 25 minutes. Remove from the oven and cool before serving.

    I really like this recipe. Very quick and easy to make, and taste lovely. They made for a generous size rock cake. I didn't have any ground nutmeg so I used ground cinnamon instead, delicious!  -  14 Apr 2015
