These lovely apple rock buns are somewhat of a staple in our home and we really enjoy them for breakfast.

Makes: 8 apple rock buns
200g plain flour
25g ground almonds
2 teaspoons baking powder
1 pinch salt
85g demerara sugar
250g apples - peeled, cored and diced
2 tablespoons milk

Preheat the oven to 200 C / Gas 6. Grease a baking tray.
Into a bowl, sift the flour, ground almonds, baking powder and salt. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar and then the apples. Whisk the egg together with the milk and add to the mixture. Stir until a dough forms. Divide the mixture into 8 and place in rough heaps on the prepared baking tray.
Bake for 15 to 20 minutes until golden. Remove from the oven and cool before serving.
