About this recipe:This lovely Mediterranean salad is a favourite in our household. Great as a complete meal in itself or as a side dish.
325g broad beans
150g fusilli pasta, cooked
2 tablespoons olive oil
juice of 1/2 lemon
1/2 teaspoon dried oregano
1 teaspoon chopped fresh oregano
salt and pepper, to taste
3 tomatoes, chopped
1 pepper, chopped
55g button mushrooms, sliced
6 black olives, halved and pitted

Bring a saucepan of water to the boil. Add the beans and cook for 5 to 8 minutes until just tender, drain. Add the pasta then set aside to cool.
To make the dressing, combine the olive oil, lemon juice, oregano and salt and pepper in a screw top jar. Shake vigorously then drizzle over the pasta and beans. Add the tomatoes, pepper and mushrooms. Decorate with olives. Chill in the fridge prior to serving.
