Mediterranean salad

    This lovely Mediterranean salad is a favourite in our household. Great as a complete meal in itself or as a side dish.

    Serves: 4 

    • 325g broad beans
    • 150g fusilli pasta, cooked
    • 2 tablespoons olive oil
    • juice of 1/2 lemon
    • 1/2 teaspoon dried oregano
    • 1 teaspoon chopped fresh oregano
    • salt and pepper, to taste
    • 3 tomatoes, chopped
    • 1 pepper, chopped
    • 55g button mushrooms, sliced
    • 6 black olives, halved and pitted

    1. Bring a saucepan of water to the boil. Add the beans and cook for 5 to 8 minutes until just tender, drain. Add the pasta then set aside to cool.
    2. To make the dressing, combine the olive oil, lemon juice, oregano and salt and pepper in a screw top jar. Shake vigorously then drizzle over the pasta and beans. Add the tomatoes, pepper and mushrooms. Decorate with olives. Chill in the fridge prior to serving.
