Cuban mango and apple crumble

    Here is a tropical twist on a traditional favourite.

    Serves: 4 

    • 5 small apples, peeled, cored and sliced
    • 200g tinned mango pulp
    • 200g caster sugar
    • 70g dark brown soft sugar
    • 85g butter
    • 70g plaintain flour

    1. Preheat oven to 180 C / Gas 4.
    2. Place apple slices in an oven proof pie dish.
    3. Mix mango pulp with sugar and pour over apples.
    4. Use remaining ingredients to create a crumble and place over apple/mango mix.
    5. Bake until top is crusty, about 25 to 30 minutes.
