Scottish Dundee cake

    This lovely Dundee cake comes from Scotland and is hearty and packed with flavour. Enjoy for afternoon tea or indeed at any other time of day.

    Serves: 8 

    • 225g butter
    • 225g soft brown sugar
    • zest of 1 lemon
    • zest of 1 orange
    • 55g glace cherries, halved
    • 170g raisins
    • 55g currants
    • 125g sultanas
    • 110g mixed peel
    • 300g plain flour
    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 55g ground almonds
    • 4 eggs
    • 2 tablespoons brandy
    • 55g blanched almonds

    1. Preheat the oven to 160 C / Gas 2/3. Grease and line a cake tin.
    2. In a bowl combine all of the ingredients, except the blanched almonds, and mix well. Transfer to the prepared cake tin then gently press the almonds into the top of the cake in neat circles for decoration.
    3. Bake in the oven for 2 hours until a skewer inserted into the centre comes out clean. Remove from the oven and cool fully before slicing and serving.
