Picnic slices

    These lovely picnic slices are easy to make and taste great. Chocolate and coconut combine for a taste sensation.

    Serves: 8 

    • 225g plain chocolate, melted
    • 55g butter
    • 110g caster sugar
    • 1 egg, beaten
    • 110g desiccated coconut
    • 55g sultanas
    • 55g glace cherries

    1. Line a Swiss roll tin with baking parchment. Pour the melted chocolate into the prepared Swiss roll tin and pop in the fridge to set for 10 minutes.
    2. Preheat the oven to 150 C / Gas 2.
    3. In a bowl, cream together the butter and the sugar until light and fluffy. Add the egg and mix well. Fold in the coconut, sultanas and cherries. Remove the set chocolate from the fridge then spoon the mixture evenly over the top.
    4. Bake in the preheated oven for 30 minutes until golden brown. Remove from the oven, mark into bars then allow to cool. Slice and serve.
